If I were in your shoes, I'd just go for what looks good to you! I take recommendations from others, but typically unless it really interests me, I'll get what I want instead. As you take classes, you'll discover more and more films of significance from throughout history, but for now I'd say to focus on what you can learn from that also sounds like fun to watch.

This part:

All That Money Can Buy is what the title was changed to upon its release.

As someone who unabashedly loves the 1995 one (it's fun and gets it mostly right), the new Mortal Kombat is pretty forgettable and confusing. Frankly the more about film you know, it gets harder and harder to satisfy someone. You see the flaws, you know the formula, etc. But once you find something truly unique or evocative, you cherish it more I find.

I have no beef with those who love any version of a Mortal Kombat film, it's just not for me. I think what got to me was that someone said I shouldn't be a film student if I didn't appreciate a film they liked. I study films and even I don't take it seriously enough to tell someone they are lesser than for not liking what I like.
