I noticed on the B&N website that some of the blu-rays are in Pan and Scan. Modern Times and Breathless to name a few. Is this true? The reviews on this site never mention any Pan and Scan.

All criterions are going to have the original aspect ratio, so yeah for many of the older films they will not be in widescreen. It's the same for other classic blu rays such as casablanca, wizard of oz, etc.

They're not "pan and scan" by definition. Those films are in their original aspect raitios, which are probably either 1.33:1 or 1.37:1. Criterion is always going to release films in their original aspect ratio, when possible. That's why it's not necessary to mention it in any reviews. So, to watch those films properly, you're going to have black bars on the right and left side of the picture.

Just got back from B+N. If there are still any questions as to whether or not the sale was in-store also, it is. I picked up Paths of Glory and Charade. I went bigger during the last one, so I decided to take it easy this time. Plus I'm gonna pick up Night of the Hunter when it comes out. My Barnes was stacked. I think they had two copies of every title (except they didn't have any copies of Crumb which was odd. And it kinda sucked because I was considering picking that up as well.). Going to the store and seeing all those films right in front of you is very dangerous for someone like me, I get way too tempted. I think I need to stick to online from now on.

Exactly. Only on some of Criterion's DVD releases do they windowbox the 1.33:1 and 1.37:1 aspect ratios to compensate for overscan on some older televisions. The blu-ray transfers of those same transfers are not windowboxed, though.
