yes he said for the 25th anniversary release that's 2025 The following where left out from the EE SETS

LOL nice pull off Wiki there, anything off Wiki cannot be confirmed all we know for sure is there is more footage not used and discussions of an ultimate edition possibly being released with all unused footage.

It is sourced. Some of those appear in the appendices bonus features and during commentary.

I finally saw the EE's for the first time. I must be one of the only people that actually prefer the TE's over the EE's. I felt like most of the extended scenes were a bit corny, didn't seem to fit well ruining the flow and slowing down the the story. I totally understood why they were cut out initially.

The BDs look great. About as good as I expected, but in a way kind of wish I bought the TE's. I skipped them when they came out since I wanted to see the EE's anyway, and now it turns out I like the original versions more. Kinda burned myself there. Could have saved a bit of money just going with the TE's.

Well... Cameron did Titanic and of course Peter Jackson did The Lord of the Rings... Now.. if Cameron did a 4K remaster of Titanic, then Peter Jackson can do a 4K remaster of The Lord of the Rings... period

Difference is, Titanic did not have a digital cinema master. They HAD to re-scan it. Titanic's (much fewer) digital effects scenes were not touched up and stuck out pretty badly on the IMAX screen. I'm not sure if this is an accurate figure but I remember reading that something like 75% of the Lord of the Rings films' runtime has some kind of digital element on screen.

You would have gotten inferior transfers detail wise with FotR and TTT. The former is painfully distracting.

A lot of this stuff simply couldn't be put back in, as the scenes were deleted due to plot revisions and would make no sense if they were simply dropped back in. Things like Arwen at Helm's Deep, for example, are "unused scene" material only. Aragorn's death is 120 years in the future and its implications are covered in TTT scene between Elrond and Arwen.

I would love to see the scene with Aragorn and Arwen's first meeting, and I'm vaguely hoping it ends up in The Hobbit, though I sort of doubt it will.

The items you listed from Wikipedia were allegedly filmed footage that didn't make it into the final cut(s), whereas the quoted article on OneRing.net was talking about making-of footage that would be added to the supplementary material ("The tone of these materials is not so much about filmmaking process – as we already covered that – but instead about the experience of living and making these films"). It doesn't mention footage that would be added back into the actual films.

While I prefer the EE's myself, I could totally see some people preferring the theatrical cuts. Fellowship in particular I thought the pacing was a bit off at the beginning before the plot really got going. However, at this point I've seen the EE so many times (the only versions I've ever purchased), I think if I went back and watched the theatrical version now, I would just be distracted at all the missing scenes.

The one film of the three I REALLY feel is massively superior in the extended cut is Two Towers, though. That cut actually fills in a lot of holes in the story-- a couple of examples are the horse that rescues Aragorn, and the explanation for Faromir's motivations and actions towards Frodo and Sam.
