Also, if this is any indication of the Blu-ray menu, then the deleted scenes ARE on the film disc (another screenshot on iTunes shows this). Maybe this is just like the Alien Anthology discs, where you have seamless branching AND the option to play the extra scenes individually.

Indeed. But something's going on for the actual menu pic to say it's longer. And we know the deleted scenes are part of the iTunes download.

Still says 2:39 under scenes. Maybe there are two cuts and the 2:04 is just referring to the original? Complete speculation I know.

I'm not so sure that the iTunes runtime indicates an extended cut. If that were the case, then that would mean all 35 minutes of the deleted scenes were going into back into the film - and I'm not sure that's likely. It may be that the deleted scenes are part of the movie timeline, in that they play out, one after the other, following the feature.

I'm not trying to put a damper on things, but the runtime on the iTunes page does, after all, state the original length of 2 hrs. 4 min. Not to mention we have seen no mention anywhere on any of the proposed BD packaging of an extended/director's cut.

It'll be nice if I'm wrong, but I'm not getting my hopes up.
