No. The first two, for whatever reason, have different encodes than the EU SC discs (presumably done by SC, as LG's encodes by Pixelogic/Radius60 wouldn't be anywhere near that bad), and are noticeably worse.

Yeah. Between the StudioCanal and Eagle Pictures releases, neither is 100% perfect (at least going by Caps), so just go with whichever one, I guess? I'm personally waiting for a newer disc, but that could take a while.

Gotcha. I was leaning towards the new Eagle 4K steelbook that's coming out. I like the movie, but not enough to spend $60-70 on the UK deluxe version.

As far as I know the revised Rambos are being pushed for by Lionsgate and will be exclusive to them. I think I saw something about new special features for the 40th anniversary StudioCanal edition but the listings for it don’t mention anything.

This talk just inspired me to go on a deep dive on the internet and I came across this—“as is the norm, the disc itself is the existing release, and we get posh Steelbook packaging this time around”—so I guess now I know.
