Calling UOT fans a "dying breed" is ridiculous. If it was announced for Bluray tomorrow the ears of anyone who considers themselves a SW fan would perk up. Film buffs would get excited. Film historians. The average "nerd". It's a cliche but you're forgetting these aren't just movies, they are pop culture history. Owning the original cuts (the marketing alone is so easy) will forever be a big deal.

The release of the UOT on BD or any future format would be the same as every time WB releases the Wizard Of Oz and Gone With The Wind. Those films are a lot older and people still clamor for them. Same thing with the animated classic Disney films.

How long do they stream the live feed (it's still going). Is it going to be all day, for the entire three days?

It's actually four days total; there's a daily schedule on the StarWars.com homepage. Each day ends with a wrap-up (today's is at 6 PM PT), so I doubt it'll be a 24/7 feed; but there's definitely more to come thru Sunday evening.

The Complete Saga is back ordered on amazon.com for 10-14 days and bestbuy.com shows it as not being available for shipping. I guess the trailer is doing its purpose.

The bottom one has DVD's of the Blu-Ray Versions of the movies.
