![]() My peppers are only rated at 200k units and the hottest sauce I've tried was a 750k unit sauce. And that was almost too much. I cut a sub in half and put about 5 drops on it. It was hot, almost too hot but it was good. The second half I doubled up...big mistake. I must of got a bit straight on my tongue because all of a sudden ![]() ![]() |

![]() Bread works with hot wings to a point. Milk before and while eating something hot works. Believe it or not bar nuts are pretty good, eat a handful before starting, then sneak a handful in every now and then. The oil in the nuts helps keep the oil in the peppers out. I've heard butterscotch candy works, but haven't tried it. Sugar works to help draw out the oils to a point. I've gotten a free t-shirts or two for eating a plate of hot wings. ![]() |

in my pantry I try to keep about 8 or so different sauces at a time. some red chili based, some green habanero based, some vinegar based chili pastes, canned chillies as well. I go through them pretty often so I'm always on the lookout for something new to try and keep rotating the stash. I like to keep a variety because what might be good on some hummus won't go with a chicken burrito.
Sriracha is a constant because I use it while cooking to add another level of flavor. when I cook I like to use different forms of chillies(fresh, dried, ground) for layered flavor and heat. coconut milk is great for cooking with lots of chillis because it is naturally cooling so it can take a lot of heat and still be tolerable. I made a nice coconut snapper and shrimp curry for my wife's aunt a few weeks ago served with some cilantro basmati rice. once the curry was almost done I gently poached the fresh seafood in the curry. served with a crisp italian pilsner |

![]() I even enjoy making the trip to the fish market and checking out the fresh offerings. I was always involved in the kitchen a lot as a kid because my mom was constantly cooking something or the other. my mother in law even got me a pseudo gag gift for christmas: a black apron for with my name on it and it says "executive chef" under that. ![]() |

That is one of the greatest inventions ever to come out of Asia. I use waaaay too much when I eat Pho. Also sometimes for fried rice.
