Had prawns for lunch today with salad (thinly sliced carrot, cucumber, onions, snow peas, grapes, cherry tomatoes, chopped lettuce, the dressing I used was the juice of 2 limes, 2 tablespoons of sugar and a splash of fish sauce, thought it went very well with the seafood.
Anyone else got some good dressings for seafood? |

This one is good with a nice piece of salmon or anything really. Last time I used it, I had many requests for the recipe. Unfortunately, it's not my own.
1 tsp minced shallots 1/4 tsp minced garlic 1/2 tsp Dijon mustard 1 1/2 tsp honey 2 TBSP chopped capers with their liquid 2 TBSP fresh lemon juice 1 TBSP champagne vinegar 1 tsp chopped fresh dill 2 tsp chopped fresh parsley salt & pepper to taste Combine it all then whisk in 1/2 cup extra virgin olive oil slowly. I usually modify based on what I have on hand and typically add more garlic and shallot. Also due to popularity, I double it as well since it usually ends up on the side salads. |

I never really picked up a lot of lemon in this one because of most of the other ingredients. I'd surely try it with lime if I was out of lemons. This dressing seems to be very forgiving as long as the foundation stands. It's kinda sweet because of the honey.
