I have my setting for the sound field on multi stereo for the cable box but when I turn on the ps3 and I try to change the sound field it says "not used" . Does the ps3 only play blus on one sound option??

Nope, can't be changed. At least, no way that I've ever figured out to do it. It's going to give you the sound exactly as it's intended and not let you change it in any way.

Now, that said, I think there are things within the PS3 that will let you do it; like if you're watching videos or streaming music. But from the main menu, you won't be able to adjust it.
