I always took that scene as to add creepiness to Chigurgh breaking into their home, showing he didn't have boundaries, the way he takes their milk right out of their fridge and drinks it straight from the bottle, which is generally looked down upon by anyone in a multi-person household for hygiene reasons. And then later, the sheriff does the same thing to get into his headspace and try to think like him.
