I was just reading that HBO’s From the Earth to the Moon has been remastered and is getting released on blu-ray.

On the US iTunes the series has a bonus feature about the remastering process.

Is it safe to assume the episode available on iTunes are the new remasters?

It should be if they're in HD, as the show has never been available that way before.

On another not is the digital code Vudu only? I guess HBO moving away from the multiple redemptions they were offering before (Vudu, iTunes and GooglePly)?

When I redeemed my copy only Vudu was offered. However, I would not make assumptions about HBO title redemption at large based on one release - it's plausible this was an exception to the rule.
