Unhappy iPhone back up retrieval question

Long story short. While syncing my iPhone, iTunes had an error. When I restarted it all of my music was deleted from my phone. I know every time I sync though it "backs up" my phone. Can anyone tell me how to retrieve this so I can get my music back?

In iTunes go to preferences>devices, and it'll have a list of your backups.

I have had a problem with every upgrade on my iPhone 3G. For some reason the upgrade failed and then it would not recognize my iPhone. I had to plug my iPhone into another USB port for it to recognize the device. I was then able to upgrade, but as a fresh image with none of my apps, music or movies. I closed iTunes and went back into iTunes. I clicked on my iPhone inside of iTunes and it asked me something about restoring my items. This has worked for me twice now. I can't guarantee it will work, but it did for me.

when backing up iPhone/iPod touch through iTunes, it doesn't back up your music. I'm not sure what it does for the touch, but I own two iPhones and it only backs up your notes/contacts/text messages/emails/etc etc kinda information. Nothing to do with the actual media on your iPhone/iPod touch.

Is the iPod touch the same as the iPhone in the sense you can only have your device synced to ONE iTunes library? Only thing I dislike about my iPhones.
