You need to setup audio output to bitstream. Try that and see if this resolves your issue.

Optical output can only handle high resolution LPCM information in stereo format. It simply does not have the bandwidth to pass hi-rez multi-channel information. To keep multi-channel audio setup, change your optical output to bitstream. In this case PS3 will output DD/DTS multi-channel info, but without the added high resolution information. To get the full advantage of the high resolution audio you need to upgrade your receiver to accept HDMI.

I had similar audio problems with my PS3 I updated the system with a download and now seems to be fine.
