Some special features I typically like are cast commentary, 'making of' documentary, interviews with the cast, deleted scenes (if any).

A good in-depth making of documentry and a director/cast comentary are always good to have.

Special features don't always need to be about special effects. With a comedy/drama, footage of the director collaborating with the actors could still be interesting. The technical side of movie making could be shown as well. I'm a sucker for any kind of features, as long as they're good, so maybe I'm not the ideal representation of the "average person", but I love seeing documentaries that are honest. None of that PR stuff, please. Making a movie can be a battle, and there's no shame in showing that.

This. It doesn't matter what film it is but I always love seeing a "Making-of" documentary included because I want to make movies myself. Not a 10-min "Making of" that you see sandwiched between two movies on HBO but an actual documentary on the process. Commentary and deleted scenes are always nice as well. Maybe a special feature on the film's influences.

It would be interesting to get some insight from the producers on how and why this project got made over other viable ideas. Making movies is as much a business as anything else. It might be interesting to see some of the behind-the-scenes decisions that go into the creation of a movie.

Never forget the trailer if it can be used. That is one of the best extra features and something that often gets more than one look from the viewer.
