Shows whith 1-2 seasons:

Firefly
Dead Like Me (OK, it got a movie after season 2, but still...)
Carnivale
Rome
Stargate Universe
Twin Peaks
Dark Angel

I was a big fan of Two Guys and a Girl and even though it got 4 seasons I was really disappointed when it was cancelled.

Other than that Arrested Development never had a chance even though it got 3 seasons in it's original run. I'm glad Netflix revived it.

Haven't watched Freeks & Geeks, but I'm planning on doing so eventually.

Titus was really fun, but I remember thinking that season 3 was nowhere near as good as the first two, so I didn't really care when it was cancelled.

The three (that fall under this criteria) that I was bummed out about ending were:

Rome
Jericho
The Black Donnellys

There were a lot of other shows I watched just to get cancelled, but luckily I bailed out before they did so there wasn't much disappointment. Not much was really wowing me for quite awhile other than Breaking Bad. Though, I recently just got into and caught up with The Walking Dead and Game of Thrones and couldn't be any happier, despite the end to Breaking Bad. Game of Thrones has been a worthy successor to Rome for me (held that series pretty high for its time), and as a zombie lover, I'm glad I gave The Walking Dead a second chance (avoided it at first because I was following way too many other shows!).

I'm sure I'll be mentioning Firefly eventually. Been shelving it ever since I saw and fell in love with Serenity. Hoping it doesn't end with some kind of cliffhanger though.
