While they're both based on the same class A/B design, the 7 CH UPA-7 is 125W/CH (all channels driven - and a very conservative rating, I might add) while the 5 CH XPA-5 is 200W/CH (again, all channels driven). You'll get a lot more dynamics out of the XPA-5 at higher volume levels, but the UPA-7 is certainly no slouch.
