Some movies 7.1 (or 6.1) even though they say 5.1?

I have it set as PCM due to the fact that the Denon has issues decoding the bitstream of Star Wars. So I leave it as PCM so I don't have to change it all the time. What's weird is that those movies that are designated as 5.1 but stream 7.1 PCM is that I can hear audio coming from my back surrounds as though it is actually 7.1 (or 6.1) and I do not have my receiver set up to matrix 7.1 from 5.1 material.

This is not at all an inconvienence, just mind boggling and I was wondering if anybody else is noticing this.
