As to the OP, most people posting on Blu-ray.com want films to have the best possible presentation. All of the films you mentioned are decent upgrades, but could be better. Goodfellas especially could have a higher bit-rate and lossless audio. But it will never "pop" like you want it to. It just doesn't look like that in terms of cinematography or with consideration to the film stock used.
Goodfellas definitely needs a new transfer, if only to get rid of the vertical scratch.

All the early Fox, Paramount, and Sony MPEG-2 encodes should be redone as well.

A lot of the early WB releases should be re-released too. Low bit-rates for some of their biggest films is a joke, The Matrix and Batman Begins are at the top of my wish-list for double dips.

How about The Assassination of Jesse James by the Coward Robert Ford? A movie of that considerable beauty deserves more than a single-layer disc, lossy audio, and edge-enhancement which causes the grain to appear stationary.

Agreed. You're right about One Hour Photo too, that's another excellent example.

WB has actually released a lot of sub-par Blu-ray's. I hope they re-release a lot of them in some sort of "Mastered in 4K" line similar to Sony.

Have to agree but for the very reasons you mentioned, I stood pat with the R2 special edition DVD. Great total package. Same with the R2 Shawshank DVD.

I recently watched the Courage Under Fire Blu-Ray, and it looked really weak and digital, so I second this.

Almost every MPEG-2 transfer is out-dated and could be improved. There are only a small number of MPEG-2 releases with good enough encoding that it doesn't bother me as much.

Well one reviewer you can flat out ignore, but caps-a-holic, is good for just comparing to the dvd.

Kingdom of Heaven, mpeg-2, looks better than just about anything out now. That is rare though, b/c many did not look that much better than a high quality dvd.
