Oh yeah: Yoda clearly states to Luke that he is not a Jedi yet until he faces Vader, which of course he did in Return of the Jedi. Not only did he face him but he brought him back to the good side if ever so briefly. Hence, Luke attained Jedi status.

Yoda made him one. He was a Grand Master and a member of the Jedi Council. More then enough authority to proclaim someone a Jedi.

We see Yoda's force ghost in both ROTJ and TLJ, so I don't see why this is a problem. We also see both Anakin and Obi Wans ghosts giving what we can consider approval in ROTJ. That's 3 Jedi Council members.

Maybe Luke shows up and helps her study for class. Then the Force ghosts can all nod at the Graduation.

It should be noted that Ahsoka herself doesn't consider herself a Jedi. She says she's not one on numerous occasions.

She left the Jedi Order not because she didn’t want to be a Jedi Knight but because of the circumstances. Last we saw her in BOBF she wasn’t affiliated to Luke’s new Jedi Order. That suggests she is now comfortable with who she is and her place in the galaxy. Nevertheless, as much as she doesn’t consider herself a Jedi anymore, we are all the sum of our experiences, so being a Jedi will always be part of who she is.

Ahsoka is a top 3 character for me. She is actually one of the cooler good guys. Obi Wan, Yoda, yeah they are powerful and wise, and all that, but when you have Vader, Maul, Grievous, Cad Bane etc., there is no comparison. Ahsoka provides some "balance" at least. Balance, get it?
