I'm not the biggest steelbook fan like you guys are but these are all really well done! Question though, I want to do this for regular Blu-Ray cases and PS3 cases. But what size should I print them as?

I like your Two towers cause it shows directly which part of Lotr it is.

THE fellowship i dont like, to me there is no essence of the fellowhip.

I did this one in the amaray case for Big Trouble In Little China Aus/NZ. Printed on A4 size Glossy Photo Paper.
Just measure the sleeve and set your program to those dimensions, then print. I stuck it to the sleeve with a piece of double-sided tape in each corner.

0.8cm is what I make it too. The height I didn't measure. I printed the whole thing to fit fully across the SteelBook (27.4cm), then cut out the two end pieces (13.3cm each) which left me with the 0.8cm spine artwork. When I put the artwork on the spine, I folded it over at each end and cut off the excess.
