Find it awful hard to concentrate when trying to decipher pages of this, so if anyone would like to answer this with a Yes or No, thanks very much.

Is it true that the two new releases feature the following configuration?

UHD/BD set is a new 4K for the UHD and the 2007 issue on BD;
Single BD is the newer 35th anniversary disc.

Yes that is correct.

For the UHD/BD, the 35th Anniversary special features are on the UHD disc.

It may not be a new transfer & new extras etc, but I'd argue the 35th Anniversary disc is a great looking release. It's not like other films where the only option is a DNR scrubbed, soupy mess etc. The 35th Anniversary disc has nicely resolved grain and arguably better (than '07 disc) colour grading.
The main issue was that the 35th disc was OOP and creeping up in price. This new, cheap release with that disc solves that issue.

Compare 'Halloween' to 'Dawn of the Dead', currently stuck in OOP limbo due the unrealistic expectations of the rights holder. For Dawn you have the choice of the affordable Italian release & the overpriced OOP releases, the best of which (of the various cuts) could only be described as OK/passable.

2007 release has the following:
Original commentary with Carpenter, Curtis & Hill
Halloween: A Cut Above The Rest (probably the best documentary on the film)
Trailers, Spots (all on the 2013 release as well)

Agreed. It's probably one of the more forgivable copy and paste releases. Whereas, something like say, Tremors had a 25th anniversary release with less features and only a digital copy. No proper remaster. I may pick this up for the value, it's not a bad price.

I'm really drawn... I love Halloween but I already have 3 copies of this (07 BD, 35 Anniversary BD and Scream factory 15 disc set). I do however, have a fully UHD set up with 7.1 audio and feel the need to have the film in 4k. Am I being stupid???

Also what, if any, are the difference between the UK and US copies???

If I had a UHD screen I prolly would get the UHD disc, reviews are all pretty favourable. For example digitalbits:

Also since its a worldwide release (Lionsgate for UK/US) and I highly doubt the US/UK releases are different.

I will prolly get the 1 disc, no plans of getting a UHD screen in the near future. And was planning to get Halloween on BR to upgrade my anchor bay THX dvd (dont laugh!)

Most 4K reviews don't, not even on here. Capturing 4K isn't as tricky as it once was, true, but you've still got the SDR conversion to consider which can literally wreck how the image is intended to be seen. They're useful to a point but should rarely be considered the absolute gospel without having seen the disc in motion on a decent HDR setup.

Don't think I've ever read an album review that had audio samples, either.

Surely if you're the sort of person who cares as much about a self-appointed expert's opinion, you'd be prepared by the same token to trust what they're saying without visual evidence?
