It's entirely possible Disney might not be interested in doing a set of the unaltered trilogy, but it's nonsense to suggest that if they were they'd balk at the expense. They wouldn't cost any more than any other big restoration project all of the studios have undertaken many times over the last few years, and the release of the original unaltered trilogy in cinemas and on Blu-ray would be huge. There are plenty of Star Wars fans who'd consider it a bigger deal than Episode VII! Disney would recoup their costs no problem.

I think it would be a combination of interest and expense that will prevent us from seeing them. They may be interested but what's going to be worth putting money behind, a new show like Rebels or the new movies which will no doubt be gargantuan, or paying a lot of money to restore the original prints plus touching up etc? Obviously they could afford both easily, but I think they're more concerned with new content. Weren't all the 3D conversions shelved just after Disney took over? Maybe in the next 10 years or so, but for now I can only see it being about the new trilogy. As much money as Disney have, I still think they're gonna handle it smartly.

Man I grew up watching these recorded from TV onto VHS, so 720p is absolutely fine for now
