That's a bit weird.

Why would it all of a sudden take on a new look?

In all the Alien movies, the alien has just used other lifeforms simply as incubators. They never morphed into their form.

I did, but I'm still not seeing the connection. Ripley was being cloned which is why there were so many failed and bizarre creations.

Is that how this was created?

That was Alien Resurrection (aka Alien 4)

Alien3 it incubated in a dog and took on doglike characteristics, including running on all fours, sleeker, faster and more aggressive.

The director originally had it as one of the cows that inhabit the planet. The director's cut was a much better flick than the original. But yes, the Aliens have always taken on characteristics of their host. This is not a new concept, the "Predalien" was taken directly from the comics.

Going back to roots by no means guarantees success. Alien 3 went back to basics and I thought it was the weakest of the first 3, and it only got worse after that. Even I could write a better Alien story.
