Casablanca looks really sharp. Edit: Oh yeah, HOW THE WEST WAS WON!!! That's a possibility. But I'd tend to agree with the Master & Commander recommendation as a "Grandpa" movie that still has excellent HT technical merits.

Because of his age. I'd say Casablanca, How The West Was Won, Bullitt, The Longest Day, and Patton are all titles that should 'wow' him. He might even like The 7th Voyage of Sinbad.
