I won't repeat some that have already been mentioned.
One that needs pointing out is The Descent(dir. cut)

idk, I think the only directors cut I have seen is Superbad, and I hated the added scenes they were not funny.

A few that I remember are Apocalypse Now Redux (it added nearly an hour of Marlon Brando weirdness, it seemed), Das Boot (I loved the added scenes on that DC, which also had an even longer miniseries version), Dances with Wolves had a much longer cut (I don't remember the specifics), Payback had the Straight Up cut, and Terry Gilliam's Brazil had a couple interesting cuts as well (I didn't care for the Happy Ending cut at all, though).

I love the extended versions, like Kingdom of Heaven, the Patriot and the LOTR films. I think the extra scenes add to the story telling.

the one director's cut i find awesome, is Donnie Darko, it's a totally different viewing experience then theatrical cut, but highly recommend watching the Theatrical cut first due to the extended version wrapping up things that leave you guessing from the theatrical cut .

That's one thing that has bothered me since buying into Blu-ray. I've noticed that they tend to release the theatrical cuts more often than the unrated director's cuts. Just to name a few off the top of my head;

Ultraviolet
Basic Instinct 2
Terminator 2

Why not release the director's cuts or put both versions on one disc?

An example of a director's cut that I enjoyed a lot more than the theatrical is Kingdom of Heaven. The Director's Cut is amazing while the theatrical is just alright.

I don't know if anyone else has this opinion but I hate the unrated/extended cut of Dumb and Dumber. I wish they would have just released the theatrical cut on bluray.

The theatrical cut of Dances With Wolves is far superior to the Extended cut. Costner himself said the Extended cut was a studio idea that he was never really behind.

The revised Exorcist is lame except for the extended stair conversation between Merrin and Damien.

Kingdom of Heaven DC is definitely the best scenario that I've seen...

I hate Donnie Darko DC because it over-explains everything and the Theatrical version leaves things up to the imagination...

I can't recall anything else that comes to mind..

I recently saw Tom Hanks' extended edition of "That Thing You Do". It has 39 minutes of previously deleted footage. It was an interesting primer on the fine art of film editing.

Some of the new scenes were welcome additions to the story, shedding needed light on various subplots. Others highlighted the reasons they originally hit the cutting-room floor. One scene was particularly weakened in its extended version. When Faye breaks up with Jimmy, the scene runs too long and really saps the power out of her moment. It became far less effective than the tighter shortened version.

All in all it was enjoyable watching the longer version. Being one of my favorites I was very familiar with the film already. It was nice getting some new insights into the characters and storylines. Comparing it to the original reveals areas in which filmmakers make critical choices. Still, I prefer the original cut.

Payback director's cut sucked! It is a completely different movie. One of the few times that I thought the Studio was right to step in and take control to get the theatrical cut out.

What really sucks is that only the director's cut is out on blu, still waiting for the version I saw in theatres.

I didn't like the additional stuff in Dumb & Dumber either. It is probalby because I have the theatrical version memorized.

I agree with Donnie Darko. The regular cut is far superior. As for Kingdom of Heaven, none of the versions are any good.

Just as others have said, I'll have to go with The Extended versions of Lord of the Rings films. I also prefer the Director's cut of Aliens.

I just watched Max Payne a couple of nights ago, and I have to think that a Director's or Extended cut of the movie would greatly improve it. It was fairly entertaining for me, not having ever played the video game, but I think a Director's cut would enhance it, more developing of the plot and characters, I kind of felt like I needed to know something, maybe from the game, coming into the movie already, which of course I didn't. I think I'll end up buying it on Blu, if I can find a good deal on it, and see what they have changed/added to the film.

The director's cut of the Descent is just the original UK cut. They edited the ending for US audiences.
