Hearts of Darkness about Apocalypse Now is a great documentary. Last one I can think of is Sweet Liberty with Alan Alda and Michael Caine. Was a long time since I've seen that but remember it was pretty funny.

A Day For Night...it is in French, but it is by far one of the best movies about movies and also one of the best french films ever made.

The documentary on the second disk of From Dusk Till Dawn was awesome.
