As the UK and German discs are OOP and expensive what is the next best alternative? I've been comparing caps and snooping around and the Italian disc from 2020 appears to be remastered (according to reviews on Amazon Italy) but what does it look like? I'm tempted to pick it up if it's similar to the German Koch release which is impossible to get.

I'm unsure if the Italian release is more similar to the Wildside or Koch release color-wise, but even with a heavier yellow-push, the 4K restoration is a huge step up from the old Eureka disc. Concerning the Italian release though, I'd be more worried about forced subtitles. This may not be an issue if you have a player capable of subtitle-shift, but I'm not sure. As is, the Koch release is the definitive one, with the color-corrected 4K restoration and optional subtitles.
