I know it was botched badly, but if the Clemson guy tries to catch a terrible punt attempt and then it rolls out the back of the endzone, shouldn't it be a touchback and not a safety?

Because Clemson is allowed to touch. It would have been a dead ball if it hit GT, but it's effectively a fumble once it hits Clemson.
