If I had gotten an Ultimate edition on the first round but had originally wanted the one-click combo, can I still put in for that edition or am I out of luck since I already got the Ultimate?

of course, you can still register the one click pack, but you can't put your name for another copy of ue.

You should be good if you don't have more than TWO of any single version between both GBs
