Hmmmm.

From Wiki:

"Got My Mind Set on You" is a song written by Rudy Clark and originally recorded by James Ray in 1962.

It is best known for the cover version released by George Harrison in 1987.

McCartney - Put It There (I love the music he made with Elvis)
Harrison - When We Was Fab (Great stuff when he collaborated with Lynne)
Starr - It Don't Come Easy (I dig the All-Starr Band stuff, but this was his best effort by far)

I'm sorry to say I'm not familiar enough with Ringo's solo catalog to make a choice...

Ten years later edit (1/13/21), as I became more familiar with GH’s solo work. “Isn’t It a Pity” is simply devastating.
