Not enough to actually watch any of them. Yet.

It's weird, I do tend to pay attention to what special features a BR has, but I just never make time to watch them. It's legit been over a decade since I've bothered with a commentary track, and that was on DVD, well before BRs were a thing.

But at the same time, I'm always operating under the assumption that one day I'll want to check them out. But for the time being my attitude has been "I'd just rather watch another movie."

I'm stuck in the middle when it comes to blu-ray extras. I have seen where some blu-ray /4K releases offer an additional disc of extras containing motion picture musical scores, behind the scenes, and non-essential padding in order to offer a limited edition release at a higher price. Some distributors go out of their way to bump MSRP $10 and more on these limited edition sets containing extras. I like extras but what matters most to me is a quality audio video release at a more reasonable price.

I do not because rarely do I have time to watch them. I value stuff like booklets much more - those I can take anywhere with me, including the bathroom.

It's great to have special features with your favorite films. Is it necessary for every film? Not really and most of us only watch them once-which is fine! Empire of Dreams was the best special feature as it was a 2.5 hour exclusive/documentary when Star Wars first hit DVD in '04. It's on Disney+ now as well in HD, but cropped!
