Default The Official Recipe Thread

There's a handful of old recipe threads for specific categories, but I didn't see a thread for whatever. And I want to try new foods and eat healthier, so lets share our recipes and meals we like.

Here's one that my wife makes that I absolutely love.

Sausage Rice Casserole

Ingredients:
  • 1 pound pork sausage
  • 1/2 onion, chopped
  • 1 stalk celery, chopped (eww, leave that one out!)
  • 1 green bell pepper, chopped
  • 1/2 cup uncooked long grain white rice
  • 1 package of chicken noodle soup mix
  • 2 cups of hot water

Directions:
  1. Preheat oven to 350 Degrees
  2. In a large skillet over medium high heat, combine the sausage, onion, celery, and pepper and saute for 5 minutes. Drain any excess fat.
  3. Stir the dry rice with the sausage and vegetables, then add the water and soup mix. Transfer this mixture to a lightly greased 2 quart casserole dish.
  4. Bake, covered, at 350 degrees for 90 minutes.

And BAM!

One-Pan Whiskey Porkchops, one of my absolute favorites and SUPER easy. For the first time last night, I used Bullitt Bourbon and it was fantastic (in the past I've used Jack Daniels and in a pinch, Crown):

2 pound extra lean ground beef
1 onion, diced
2 diced green bell pepper (1 cup)
4 cloves garlic, minced
2 teaspoons kosher salt, or to taste
1 teaspoon ground black pepper
3 tablespoons all-purpose flour
2 tablespoons brown sugar
cayenne to taste
1 cup ketchup
2 cups chicken broth or water
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
1 cup shredded cheddar cheese, divided

Put all ingredients into a cold pot except ketchup, broth, mustard, worcestershire sauce and cheddar. Turn stove on medium-high heat and start to stir. This will break the ground beef into tiny pieces much better than doing it in an already heated pot. The salt will drain water from the bell peppers and onion. Stir and cook until most of the liquids are gone. Now add broth, ketchup, mustard and worcestersauce. Bring to a boil then turn the heat down to a simmer (about medium). Simmer for 45 minutes stirring ocassionally. Transfer into a baking dish, add half the cheddar and poke the cheese into the beef using a fork. Add rest of the cheese on top. Broil in oven until cheese is melted and forms a slight crust. Serve with sliced baguette.
