My cousin played with his recipe for a long time befor he arrived at this. Hasnt changed it for about 4 years now.

[Show spoiler]Pizza Crust

1 Cups Bread Flour
Cup Semolina Flour
tsp rapid rise yeast
1 tsp salt
tsp sugar
2 TBS. Olive oil
Cup room temperature water

Mix dry ingredients in bowl. Add wet ingredients, bind together and knead for 2 minutes, adding additional flour if too sticky.

Form into a ball, cut in half. Wrap each half tightly in plastic wrap and place in refrigerator for 24 to 72 hours.
Take out of refrigerator one-hour prior to use.

Roll out to desired thickness with rolling pin, transfer to wooden peel that has been lightly dusted with cornmeal.

Top with your favorite toppings.

Bake on preheated pizza stone at 450 degrees for 10 minutes.

Makes 2 10 inch pizzas

I got the Cheesy Bites pizza last weekend and was not impressed. There wasn't much cheese in the bites and they were largely tasteless. I would never get it again.

I could have sworn that Pizza Hut was the first to introduce the idea of inserting cheese into the crust a few years back, only now, they've taken that idea and altered it, so that the cheese is visible.

I liked Pizza Hut when I was in college (I prefer Donatos now), but I have no interest in this gimmicky offering: I don't like cheese stuffed into my crust. I find the product in the commercial unappealing, and the actual product (pictured above) even more off-putting.

Im a NY style pizza guy myself but i like deep dish too... havent had a chicago style in a while though.... but, the best pizza is in NY baby! we got some pretty good ones in CT too....

my favorite by me is Johns Best Pizza... mmm mmm mmm

specialty pies i go to Per Tuttis - their Chicken Bacon Ranch pie is RIDIC!

I take it you live in CT? Do you ever visit Pepes Pizzaria in New Haven? Or perhaps America's very first pizzaria, Lombardi's in NY?

If I had the time and resources, I'd love to do a pizza tour of the US. I'd start on the east coast and work my way west. Though I don't care for the California version of pizza. Tofu a pizza topping is not.

ive heard about Lombardis but havent been there yet... next trip to NYC i will try it... and thats funny you mention Pepes...ive heard all about it in New Haven but havent been.. New Haven isnt exactly the nicest part of CT lol... buuuut, they are opening another Pepes where i live! so in a month or so i will be able to try it!

You need to hit the right places. And let me tell you, in LA and SF there are some Italian joints that are family owned and operated for decades and do it right.

I'm sure if you looked hard enough you could find wacked out art deco pizzas in any major city in the country.

What? There's a bad part of CT? I need to sit down.

I saw a show that featured Lombardi's pizza awhile back, and it looked really good.

Very cool you're getting a Pepes by you. It's always nice when a quality pizzeria opens up in your neck of the woods. I'll be awaiting your report.
