I think the best all-around demo disc that I've seen is either Godzilla: King of the Monsters or Zero Dark Thirty.

But my personal favorite is still probably Phantom Thread, and the Spectre disc has also grown on me a lot.

Planet Earth II is up there as well.

The Atmos for Apocalypse Now and mother! sounds quite sublime to me along with countless other more action oriented tracks to choose from.

For a squeaky clean, colorful, bright digital image would have to say Lion King 2019 is tough to beat, but if in the mood for a more grainy and organic image, then the work David Mackenzie put in for the 4k uhd release of Don't Look Now looks brilliant, right up there with many other top notch grainy UHD transfers I'd rather not list as well to keep it short.
