USA Suggestions on anime series

First off, sorry if this should be posted elsewhere. I'm looking to start watching anime again after being out of it for quite a while and I was looking at a lot of blu anime complete series sets on amazon in the $20-$30 range. I'm looking for more mature type series in content and art style so I'll list some of my favorites: Cowboy Bebop, Samurai Champloo, Berserk, Vampire Hunter D, Ninja Scroll, Akira, Outlaw Star, and things like that to give you an idea. Any help would be extremely appreciated!!!

I'd start you off with Hellsing and Hellsing Ultimate, Shiki, then Black Lagoon.... for other space based adventures Nadesico is a good one to start with...

I was about to troll you by suggesting Night Shift Nurses, Boku No Pico, School Days and Urotsukidoji but I'm neat guy so I'm not doing that.

Here are some suggestions:

Ghost In The Shell series (1, Innocence, Stand Alone Complex, SAC 2nd. Gig and it's OVA's)
Evangelion series
Mirai Nikki
Another
Ergo Proxy
Monster
Higurashi No Naku Koro Ni and No Naku Koro Ni Kai
ef: A Tale Of Memories
Jin-Roh
Vampire Hunter D Bloodlust
Hellsing Ultimate
Akira
Eden Of The East
Cowboy Bebop
Seitokai Yakuindomo
Black Lagooon
Monogatari series
Steins;Gate
Maoyuu Maou Yuusha
Elfen Lied
Ninja Scroll
Kite (The cut version)
Wicked City (This is a neo-noir/horror/two inches from being hentai hybrid that's pretty good IMHO)
Samurai Champloo

Looking at the suggestions, (I was about to post a similar post as this one, so I'll just troll here), some of the names are confusing.

Hellsing, searching Amazon there are an assortment of results.

Hellsing Ultimate Volumes 1-4
Hellsing Ultimate Volumes 5-8
Hellsing - Hellsing Series (Classic)

I'm assuming those are the 3 people are referring to?

Sekirei or High School of the Dead, if you enjoy fan service.

If you're ever in the mood for something less serious, though not entirely goofy then I'd recommend Slayers. It's classic for a reason. The first few episodes aren't great, but once you get into it will have you hooked.

As for mature series, Ghost in the Shell SAC is great and you don't even need to see the movies to appreciate it (though you should see them anyways). I don't think I've seen mention of Paranoia Agent. That's a short series with an odd storyline that gives you lots to think about. If you're looking to avoid kung-fu school girls and giant robots then check out Paranoia Agent.
