Unhappy Dealing with collecting burnout. What should I do?

If this post needs to be moved to somewhere else, please go ahead and do so.

So, I've recently been looking at my main collection of DVD's and Blu-rays and have come to a conclusion where I need to get rid of a lot of stuff and only keep favourites. I collect Anime as well, but I've stripped that down significantly too in the past few months. I basically watched a couple of episodes of everything I still hadn't seen...if I liked it, keep. If not, get rid of.

I still enjoy collecting, but it's gotten to the point where I'd rather have a collection where I can look at it & say: "All of this stuff is great." Instead of just impulse purchases which I may never watch or enjoy.

To give you an idea of what I was once going for:

I enjoy collecting animated movies. Whether it be from Disney/Pixar, Dreamworks, Sony, Blue Sky, Illumination.

The thing is, I was going for a "complete" collection you could say. So think of the shelves displaying every mainline feature film these studios released.

How should I go about this? Should I watch everything and decide what to keep and get rid of? It would take a lot of time.

Realistically, only you can answer that question. Personally, I wouldn't sell something that I've never watched. I've blind bought many things but I always watch them and then decide if it's something I want to keep in my collection. In addition, I go through my collection once in a while and get rid of stuff that I don't think I'll ever watch again.
