[Show spoiler]the changelings work by stealth, misdirection etc so they would want to keep knowledge of their return as low key as possible, they will maintain the illusion as long as possible until there is absolutely no other option, in that context it works fine because sure the changeling could have gotten out of there at any time but it chose not too hoping their line of questioning would go no where and being good little starfleet lapdogs who obey the rules they would let him go before it became necessary for him to reveal his true identity.

Dorn definitely shifted to a vegan lifestyle, he's said so in interviews (caught this at the Vegas Trek convention). He even got Brent Spiner on it for a while, but I think he admitted he fell off of it.

If Vadic is telling the truth in this episode then that’s a NO because
[Show spoiler] all the gamma quadrant changelings are dead. The only surviving changelings were the ones being kept for experimentation.

How they hell didn't they lock down the turbolift?? They had control back at that point.

Or why Data didn't pin-point the changelings in the bridge and beam them to space?? The knew how a few minutes before!

As others said, just the shoulders.

But Dorn has been talking a lot lately about his weight loss - he is like 50-60 pounds lighter these days. He said he was something like 230-240 back in the day, and is like 170-180ish these days.

This is true, but she had already appeared in earlier seasons of Picard. Some of the "special guest stars" hadn't revisited their characters for much longer (since the movies IIRC)
