Default Will Blu Ray Movies play on a telly that supports up to 1080i and not 1080p?

Question is in the title!

BLU-RAY US players will play on any TV that is 480I, 480P, 720P, 1080I, and 1080P. Most BLU-RAY movies are 1080P, some documentaries might be 720P. The BLU-RAY player will convert the movie to what every format is on your TV.

Will the PS3 play Blu-Ray movies at an output of 1080i?

According to the specifications yes. However check your TV. It's native resolution is most probably less. If possible match the output to the TV as then there is only one conversion rather than 2 which normally gives a much higher picture quality.
