To me it sounds as thought the best option to transmit these signals would be in raw Bitstream form? Before I fork out a big sum of cash (on the 2808) can someone just clarify that the PS3 will send full PCM 7.1 True HD 7.1 DTS-MA 7.1 all be it across HDMI and does this have any draw backs? I have read a few reports that audio across HDMI has a reduced volume to the amp then optical?

O.k. you're almost right
The PS3 passes PCM over HDMI (which is the uncompressed digital audio) and the lossy DD and DTS formats. It then gets converted to analog by the receiver. The Lossless tracks (all 3 of them) cannot get passed through optical, since the spec limits the bandwith (even though optical is capable of much more).
And there is really no gain in sending bitstream over HDMI instead of PCM, if the PS3 can decode it. It already decodes DolbyTHD, we're just waiting for DTS HD MA now.
