There are many strong contenders ... Finally, went with The Last of the Mohicans for its magical mix of the story (romance and action in a period setting), actors (DDL & Stowe), cinematography, and fantastic score!

Thief's my favorite too. I also like Insider, Manhunter, Mohicans, Collateral (and Heat which I think is just slightly overrated possibly because it's the first De Niro Pacino collaboration on screen)
