These are some that I have that either fit your description or are close enough. Some directly focus on a single film or an aspect about that film; others are more broad, such as covering several films or careers; some are even more "adjacent" but still about film or a culture about it.

There are several other good documentaries that will be included on special features of the main movie (such as the two on the Spookies release or Empire of Dreams which sadly is only part of the Star Wars DVD set) but these have their own dedicated release.

For anyone who has the Criterion Channel, I wholeheartedly recommend THE GHOST OF PETER SELLERS. It's one of the best behind-the-scenes documentaries I have ever seen and is about Peter Medak's nightmarish experiences working with Peter Sellers on Ghost in the Noonday Sun. Medak himself directed it and features so many authentic, honest accounts of what happened with great behind-the-scenes footage.

Under Pressure: The Making of The Abyss was one of the first ones I've seen and it blew me away. Never realized how much effort and pain it took to make that movie.

The next best thing that would top it is Hearts of Darkness for Apocalypse Now. It's a must-see.

EDIT:
Both can be seen on YT:

Was Under Pressure ever released separately?

I think this thread is only for docs that are standalone and not extras on video releases of said films (at least initially).

It isn't, didn't even stop to think that was a requisite.

I've just double checked what the OG poster has written and I think I'm wrong.

Never released on Blu-ray and probably never will be, but the 3-part, near 4 hour-long documentary A Personal Journey with Martin Scorsese Through American Movies (1995) is without a doubt one of the quintessential achievements from the renowned director. Over the last 15 years (I saw it for the first time in 2005 or so), this doc has been the guide for me when it comes to classical Hollywood cinema and I still haven't watched every movie in it.

He also directed My Voyage to Italy (1999), another one about Italian cinema, but I didn't like it as much because he spent too much time on a few canonical classics and directors, lacking the diversity and pleasure of discoveries of A Personal Journey.
