Default Audio setup for different media

I have some questions about the settings on my PS3 and my home theatre in general. My setup is as follows:

PS3 ---- Yamaha 7.1 receiver ---- Sony 52" LCD

PS3
- Audio is setup as PCM
- All the bitrates selected (44kHz, 48kHz, 96kHz, 192kHz)
- Connected to receiver via HDMI (audio and video)

Receiver:

- Connected to TV via HDMI

TV

Speakers

Do I have this setup correctly?
Should Imake adjustments when playing different media?

With the PS3 set to PCM:
- I get DtrueHD, DTS-Hd and LPCM audio perfectly with blu-rays.
- DVD's work just fine for DD 5.1 and DTS 5.1.
- CD's sound fine, usually I use 2 Ch stereo.
- mp3's sound fine.

Is the PS3 smart enough to change from 48kHz for blu-rays to 44kHz for CD's and mp3's? Does this even matter?

Would I ever use bitstream for any media ever?

Just had these questions. I have played with the system for a while now and I am very pleased with it but I would love to get another opinion.
