Highly recommended: Blade Runner, Casino Royale, Transformers, Starship Troopers, Ratatouille, A Passage to India (if you like David Lean's films), I, Robot, Close Encounters of the Third Kind

Suggestions: Shooter, Doomsday, The Mummy, The Mummy Returns, Rambo (the fourth one), The Invasion (a very underrated Blu-ray)

Some movies I can recommend, specifically on blu-ray:
  • Batman Begins
  • Spider-Man trilogy box (honestly, don't get the Spider-Man 3 BR, get the whole box instead. It has all three movies as well as an extra disc included with the third movie)
  • Fantastic Four: Rise of the Silver Surfer
  • ケータイ捜査官7 vol 1 (if you like Japanese SF series)
  • Both Mummy movies
  • Underworld
  • Transformers
  • The Rock
  • Speed
  • The League of Extraordinary Gentlemen
I have a gut-feeling that Iron-Man, the Matrix box and The Incredible Hulk will also be worthwhile purchases

Apocalypto
i, Robot
Casino Royale
Doomsday
The Patriot
Transformers
Batman Begins
The Mummy
Pirates of the Caribbean trilogy
Man on Fire
Transformers

All have top notch AQ & PQ (well except maybe for Batman Begins - though it's still good) and are very good movies.

The Fifth Element for video(audio is good too) and Cloverfield for audio.

There are also a lot of other great titles, but for me those two are reference quality.

I have already begun to investigate a few of these titles, which, I have not yet seen. I have a strong feeling there are some outstanding titles that have been recomended.
