Default A Fish Out Of Water (preferably pan-fried)

I love fish, but admitedly don't eat enough of it. In part I suppose it's because fresh fish is expensive, and I don't like frozen fish or shell-fish. My favourite fish is Rainbow Trout, followed closely by Salmon, Haddock, Cod and Sole. I also love raw and/or pickled Herring.

My favourite way for cooking Trout and Sole is to pan-fry it lightly in a tiny bit of olive oil, plenty of butter and some granulated garlic. Although I am not a huge rice lover, I think pan-fried fish is a natural combination for it, as are asparagus, french green beans and toasted almonds. I use Haddock and/or Cod for when I make Fish 'n Chips, and I have an outstanding classic beer-batter recipe for it. For Salmon fillets I prefer the pan-fry method, but for Salmon Steaks I like to grill it.

So what are your favourites?

Cod, halibut, sole, and some salmon. I love Chilean Sea Bass too but won't eat it because it's endangered. The cod I usually pan fry in a mix of olive oil and butter, halibut is reserved for more intricate, brothy dishes (has to be special for me to pay that price for it), and the salmon is done usually spiced and pan fried or slowly oven roasted. Fish tacos are another favorite way to eat it. I want to start messing with others more but it's the really "fishy" tasting fish that I tend not to like too much. Shellfish I could eat all day long.

Have you checked out the Chinese supermarkets in your area, or even those in Mississauga? They have an excellent selection (even better than contemporary supermarket chains such as Loblaws or Metro), they're fresh (some are on ice, others are swimming in tanks) and the pricing is better too. Personally, I like grouper (tastes great steamed or fried), but even if you prefer the likes of salmon and sole, I'm sure you can find these priced competitively with other proteins. My only advice is to get there early to avoid crowds and for the best possible selection.

My excuse is that there's no fresh seafood here; everything here is either frozen or packed in ice.

Hi Ken,

I have indeed and have checked them out thoroughly, just never took the plunge to buy from them. I'm really, really fussy when it comes to fish and the handling thereof and so on. I'm a little uncomfortable from some of the practices I've seen and the ease of access to the product by every consumer. It does deserve another look and there is no question that the variety of product is unmatched. You've got me thinking and pondering now!

Chilean Sea Bass (Oscar-style for additional flavor)

Parmesan-crusted halibut is also very good.

I understand the reservations one may have when it comes to seafood purchases at certain outlets, i.e. contracting salmonella or some other foodborne illness due to improper handling. I think the handling practices are better at major supermarkets, though I'm not sure the price difference (between their offerings and smaller shops) is a justifiable one. Honestly, I don't recall any food poisoning incidents stemming from seafood purchased at these establishments.

If you want to take an additional precautionary measure, you may want to visit a chain location (e.g. Oceans or T&T) rather than an independent store. Prices are roughly the same, but you may feel more comfortable purchasing your seafood at a larger supermarket.

I drove by T&T today, but I was headed for an appointment and thereby couldn't stop in. I thought of the conversation in this thread as I was driving by. LOL! I'm off on Friday, so I think I'll head over there (only about 20 minutes drive) and check them out....it's been at least 2 years since I was there last.

T&T, for the record, is now owned by Loblaws!

That's true (I forgot about that ). All the more reason to check them out.
