Black Hawk Down does not have TrueHD or dts-MA tracks. It has two options - 5.1 PCM and DD 5.1. The PCM track is reference quality.

It doesnt show up with "street kings" either. the only thing my receiver is saying is EXT. STEREO. What do I change to make the audio 5.1 dts master?

Check your audio settings on the player, make sure Secondary audio is off or not checked....

Depends on the receiver. My ps3 puts out PCM for all tracks via hdmi and it displays pcm or multi-ch on the receiver when in use. THX cinema is usually a sound processing setting, hitting STANDARD, beside the THX button, should change that.

I am using a pioneer vsx-81txv elite, BTW.

Sorry, but there's really no short cut for getting the best possible audio from your disc/player/receiver combination.

You need to familiarize yourself with the capabilities of your receiver and your player and learn how the settings on each device work in conjunction with the other device. A receiver display that says EXT. STEREO suggests that you have hit a button on your AVR to select the analog external inputs and a button for stereo. (The manual, of course, will explain the meaning of those terms on the display.)

Assuming that your player is connected using HDMI to a receiver with TrueHD and dts-MA decoders, you would set the player output to bitstream and, depending on the player, you may need to turn off secondary audio. On the AVR, lossless is best handled by turning off any DSPs or special listening modes. Most receivers have an Auto option for each input where the AVR detects the incoming signal and processes it accordingly. That's the best starting point when setting up a receiver.

As for the discs themselves, go to the audio or language menu and select the track you want to hear. Discs with a dts-MA track usually default to that track. But, that's not always the case with discs where the lossless version is TrueHD or 5.1 PCM.

Set your 23fd player to bitstream then press the auto surround/source direct button on your receiver remote to automatically whatever is sent from the player.

I think this was also mentioned above, but make sure your receiver is set NOT to output the audio to the television (secondary audio). If it is on, then it won't do the HD codecs.

IIRC, this doesn't apply to Elite receivers.
