Does anyone know if you have to buy the boxed trilogy to get all three Spider-Man movies, or if they will be released seperately as well?

For the time being, you need to get the box set for the spidey 1 and 2.
3 will be available alone.
But might as well the them all now. plus 2 comes with 2.1

Yeah, like rjg said, you need to get the box for the other two right now.

I dont mind waiting though, so I'm just getting 3, and will wait for the eventual individual releases.

What exactly is 2.1? How is it different than SM 2?

Added scenes. it's just a way of saying they put some deleted scenes back into the movie.

Kinda like " Director cut" or something, i've yet to watch it. Cant do no wrong to an already incredible film

2.1 is more like alternate scenes. Its not all that great.
