Normally I'd join you in wanting Star Trek, but they'd probably release something that was sub-par (I recall the original Star Trek DVDs were non-anamorphic, and mastered from poor versions of the film; ultimately they were all re-released in anamorphic remastered editions which looked far better, but only after they'd bilked fans the first time through).

So my list would be along the lines of:

Gladiator
Transformers
Top Gun
Shrek (I'll be coy here and go for the trilogy)
