stereo digital output - Blu-ray Forum

This may be a dumb question, my apologies if it is. Will all blu-ray players downmix surround sound and output it via digital output as stereo? I see many of the players do this via the analog outputs (I assume for direct connection to a TV), but its confusing whether I can get a digital signal this way for connection to a DAC. thanks

quick question: Besides using the hdmi cable for audio what is the next best way to transfer the sound signal? Stereo in question has no hdmi passthrough. It has optical and RCA inputs. Which is better? Stereo can decode Pro Logic 2, DTS and Dolby Digital. I'm using a PS3 to watch Blu-ray's
