Sounds like it may be in the "store display" mode, call Onkyo to find out how to turn that off

You need to set everything to PCM except regular dolby digital and DTS

Most receivers today have an option that you can set for the default power-on volume level. Check the OSD menu, the option should be there as I know the 805 has it, and I believe you can also turn it off or set it to "last" which is the last volume position that was used. I have mine set to power on at a moderate volume level just in case I had it cranked up the last time I used it - avoids surprises.

Yes, you need to have it on Linear PCM to get the benefit of the lossless audio codecs.

The PS3 does not bitstream any of the HD audio codecs, and on top of that it does not yet internally decode DTS-MA (this is supposed to happen eventually via a firmware update).

The easiest solution is to leave the PS3 on Linear PCM. All the decoding (DD, DTS, DD+, TrueHD, PCM Uncompressed) will simply be done by the PS3 and sent out as PCM to the receiver.
