what HDMI audio output setting should I use when playing multi-channel SuperAudio CD?

(PS3 audio output via HDMI to my A/V receiver)

It depends on what type of receiver you have. It's different for different A/V receivers. Check your manual.

On the PS3, you want to set it at Multichannel PCM. Allow for auto-detection to cover the range of sampling rates. On your receiver, set it to the HDMI input and make sure that input is accepting multichannel audio input.
